  • Saugage, Chinese saugage: Cut of your choice into bite-sized pieces.
  • Vegetables: Dice the vegetables finely to ensure they cook quickly.
  • Eggs: Scramble the eggs in a bowl and set them aside.

Cooking Yangzhou Fried Rice

The Wok Heats Up

Place your wok or large skillet over high heat and add oil. Let it heat until it starts to shimmer.

Sautéing Ingredients

  1. Saugage: Start by stir-frying the protein until it's almost cooked through. Remove it from the wok.
  2. Vegetables: Next, add the diced vegetables and stir-fry them until they're tender and vibrant.
